Triple Seafood Casserole
Ingredients:
1 lb Medium Philly Wild Shrimp
1 Cup Dry White Wine
1 Tbsp Chopped Parsley
1 Tbs Butter
1 Tsp Salt
1 Medium Onion Thinly Sliced
1 lb Fresh Bay Scallops
3 Tbs Butter
3 Tbsp All-Purpose Flour
1 Cup Half and Half
½ Cup Shredded Swiss Cheese
1 Lemon, juiced
Pepper to taste
½ lb Fresh Crab Meat
1 Cup of Sliced Mushrooms
1 Cup Soft Breadcrumbs
¼ Cup Grated Parmesan Cheese
Preparation:
1. Peel and devein your Philly shrimp.
2. Combine wine, parsley, 1 tbs butter, salt and onion in a large Dutch oven and bring to boil.
3. Add in shrimp and scallops, cook 3-5 min or until shrimp is pink; stir often.
4. Drain and save 2/3 cup of cooking liquid.
5. Melt 3 tbsp butter in a dutch oven on low heat. Add flour, stir until smooth. Cook for 1 minute.
6. Gradually add half and half: cook over medium heat, stir until thick and bubbly.
7. Stir in swiss cheese, saved liquid, lemon juice and pepper.
8. Stir in shrimp mixture, crabmeat and mushrooms.
9. Spoon mixture into a lightly greased baking dish. Cover and bake at 350 fahrenheit for 40 minutes or until bubbly. Combine breadcrumbs and parmesan cheese; sprinkle over the casserole.
10. Bake uncovered 5 more minutes.
11. Let stand for 10 minutes before serving.
