Shrimp Tarts
Ingredients:
2 lbs of boiled Philly Wild Texas Shrimp, peeled and deveined
2/3 cup green onion, finely chopped
1/2 cup fresh parsley, finely chopped
2/3 cup mayonnaise
2 tsp capers
1 tsp lemon juice
1 tsp lemon juice
1/2 tsp salt
1/4 tsp ground red pepper
1 clove garlic, minced
Phyllo mini tart shells
Garnish: thin diagonal slices of green onion
Preparation:
1. Preheat oven to 400 degrees Fahrenheit.
2. Peel, devein shrimp and pat dry with paper towels.
3. Place shrimp on a sheet pan. Pour olive oil over the shrimp and add salt & pepper, then toss.
4. Spread them in 1 layer. Roast for 8 to 10 minutes, just until pink and firm.
5. Set aside to cool and then coarsely chop.
6. Combine chopped shrimp, green onions and the next 7 ingredients in a large bowl.
7. Evenly spoon mixture into tart shells.
8. Garnish with green onion slices. Yield: 3 dozen
