Shrimp Cakes with Avocado Sauce
Ingredients:
1 lb of Philly Shrimp, peeled and deveined
1 egg
1/4 cup chopped cilantro
1 clove garlic
1/2 cup plain breadcrumbs
3/4 cup chopped red bell pepper
1 tbsp fresh lime juice
2 tbsp chopped green onion
Salt & pepper to taste
1 avocado
1/4 cup heavy whipping cream
2 tbsp mayonnaise
2 tbsp canola or vegetable oil
Preparation:
1. Chop half of the shimp. Set aside for later. Add the other half of shrimp into the food processor. Pulse for 30 seconds. Add the egg, ciltrano, garlic and blend till pureed. Add breadcrumbs and pulse to combine.
2. Add to a bowl. Add the chopped shrimp, red bell pepper, green onions and salt & pepper. Mix well. Cover the bowl with foil and refrigerate for 15 minutes.
3. Add avocado, whipping cream and mayonnaise to a bowl. Mix well. Add lime juice, cilantro, salt & pepper and mix well. Cover with foil and refrigerate till ready to use.
4. Add oil to a pan. Form shrimp patties with the shrimp mixture. Cook each side for 2-3 minutes. Flip once.
5. Put shrimp patties onto a plate. Top with avocado sauce. Garnish with red bell pepper.
