Shrimp & Wild Rice Casserole
Ingredients:
1 Cup of Wild Rice
1 Pound of Philly Shrimp
2 Tbsp Butter
1/2 Green Bell Pepper, seeded and chopped
1/2 Onion, chopped
1 Cup Mushrooms, thinly sliced
1 Can of Cream of Mushroom Soup
2 Cups Grated Sharp Cheddar
Salt & Pepper to taste
Preparation:
1. Preheat oven to 325 degrees fahrenheit.
2. Cook the wild rice according to package directions. Set aside to cool.
3. Bring 2 cups water and 1/2 tbsp salt to boil in a medium saucepan and cook the shrimp for 1 minute.
4. Drain immediately and set aside.
5. Melt butter in a medium saucepan and sauté the pepper, onion, and mushroom until soft for about 5 minutes.
6. In a large bowl, combine wild rice, cream of mushroom, cheddar cheese, shrimp, and vegetables. Add salt & pepper to taste.
7. Mix well.
8. Spray an 11x7 glass casserole dish with cooking spray.
9. Place the mixture in the pan.
10. Bake for 30 minutes, until bubbly.
