Keeping it Shrimple: Shark Bait Burger

Servings: 4 servings
Ingredients:
For the shrimp burgers:
1/2 lb (about 20) Philly shrimp, peeled and deveined
1 cup panko bread crumbs, divided in half
1/4 cup corn starch
2 green onions chopped
1/2 cup chopped parsley
1 egg
Tartar sauce:
1 cup mayo
1/4 cup chopped pickles or sweet relish
2 tbsp chopped dill
2 tbsp lemon juice or pickle juice
1 tsp garlic powder
Salt and pepper to taste
For the assembly and toppings:
4 brioche buns
1 large red onion cut in 4 rings (inside rings in tact)
4 pieces of Butter lettuce
Preparation:
1. Roughly chop the shrimp into ½ inch pieces. Don’t blend in a food processor, we want chunks and not a puree.
2. Combine the shrimp with green onions, Panko breadcrumbs, chopped parsley, cornstarch and egg. Season with salt and pepper.
3. Divide the shrimp mixture into 4 equal parts. Form the shrimp into patties.
4. Place the remaining Panko breadcrumbs on a plate. Coat each shrimp patty with the remaining Panko breadcrumbs.
5. Cook patties for 2 minutes on each side or until shrimp is cooked completely.
6. Assemble your burger with your favorite toppings and enjoy
