Fried Green Tomatoes and Shrimp
Ingredients:
Medium Philly Peeled and Deveined Shrimp
2 Medium Green Tomatoes
1.5 Cup Mayonnaise
1 Cup Ketchup
1 Tbsp Hot Sauce
2 Tbsp Crab Boil Seasoning
1 Tsp Cajun Seasoning
1 Tsp Worcestershire Sauce
2 Sliced Green Onions
1 Sliced Lemon
2 Eggs
2 Cups Panko Breadcrumbs
1 Cup All Purpose Flour
Preparation:
1. In a large bowl, combine Mayonnaise, Ketchup, Hot Sauce, Cajun Seasoning, Worcestershire Sauce, Salt and Pepper.
2. Whisk until combined.
3. Refrigerate until cooled.
4. When cooled, pour into a squeeze bottle.
Boiled Shrimp:
1. Boil 1 cup water and squeeze ½ lemon into it, and add the whole lemon, Onions, Crab Boil Seasoning, Cajun Seasoning and Hot Sauce.
2. Stir until combined.
3. Add Philly Shrimp until cooked.
4. Take out Philly Shrimp and put them in an ice bath.
Fried Shrimp:
1. Butterfly the Philly Shrimp and flatten them with the knife.
2. Add Cajun Seasoning into Breadcrumbs and Flour and mix separately until combined.
3. Add hot sauce and 1 tbsp water to eggs.
4. Dip each Philly Shrimp into the flour, then egg wash, then breadcrumbs.
5. Heat oil to 350 degrees Fahrenheit.
6. Lay each Philly Shrimp AWAY from you into the oil.
7. When the shrimp are ready, they will turn golden-brown, crunchy and float.
8. Take out shrimp with tongs and place on a paper towel.
Fried Green Tomatoes:
1. Slice tomatoes.
2. Add Salt an Pepper to taste to tomato slices.
3. Dip each tomato slice into flour, then egg wash, then breadcrumbs.
4. Drop each tomato slice into the oil, still at 350 degrees Fahrenheit.
5. When the tomatoes are ready, they will turn golden-brown, crunchy and float.
6. Take out tomato slices with tongs and place on a paper towel.
Assembly:
1. Place tomato slice on the plate, add shrimp, drizzle sauce on top.
2. Add Cajun Seasoning and Sliced Green Onions as garnishes to taste.
3. Also, could add lettuce to make it a salad!
